Thai Green Curry (variation on miss Hannah Ben-Ameur's)

This fed four of us with two hungry man bellies and leftovers. It’s mighty spicy so cut down on the chillies if you’re faint of heart.

Ingredients
5 Medium Green Chillies (de-seeded)
2 Spring Onions
5cm Fresh Ginger
Tablespoon Ground Coriander (fresh is better)
1 Lime, zest and juice
8 Kaffir Leaves
Tablespoon Ground Cumin
Teaspoon crushed peppercorns
Plenty of Soy sauce and Olive Oil

Use a food processor to make a paste with all of the above, heat in a pan with coconut milk, sugar and cooked chicken and serve with basmati rice and a cheeky Kaffir Leaf.
